Beetroot Salad with feta and mint
As soon as I get a bunch of beetroot, I immediately place them in a pan and get them cooked up and into a salad - I can then enjoy them over a few days without the effort of starting from scratch! Beets are full of nitrates which the body can convert to nitric oxide - this gas allows the blood vessels to relax and widen and can help lower blood pressure, increase our stamina, reduce inflammation as well as being full of prebiotics ( a type of fibre that feeds our micorbiome)
Ingredients
3/4 beets
1 heaped dessertspoonof yoghurt
a block of feta cheese
a handful of fresh mint
1 tbsp toasted or raw walnuts
Directions
Bring beets to the boil and simmer for 30 minutes
Remove the skins and chop into small pieces
Place in a salad bowl and add the yoghurt and combine
then crubmle over the feta cheese
finally add the walnut and torn fresh mint
