Beetroot Salad with feta and mint

As soon as I get a bunch of beetroot, I immediately place them in a pan and get them cooked up and into a salad - I can then enjoy them over a few days without the effort of starting from scratch! Beets are full of nitrates which the body can convert to nitric oxide - this gas allows the blood vessels to relax and widen and can help lower blood pressure, increase our stamina, reduce inflammation as well as being full of prebiotics ( a type of fibre that feeds our micorbiome)

Ingredients

  • 3/4 beets

  • 1 heaped dessertspoonof yoghurt

  • a block of feta cheese

  • a handful of fresh mint

  • 1 tbsp toasted or raw walnuts

Directions

  1. Bring beets to the boil and simmer for 30 minutes

  2. Remove the skins and chop into small pieces

  3. Place in a salad bowl and add the yoghurt and combine

  4. then crubmle over the feta cheese

  5. finally add the walnut and torn fresh mint
