Greek Yoghurt and Kefir Bowl

As soon as I get a bunch of beetroot, I immediately place them in a pan and get them cooked up and into a salad - I can then enjoy them over a few days without the effort of starting from scratch! Beets are full of nitrates which the body can convert to nitric oxide - this gas allows the blood vessels to relax and widen and can help lower blood pressure, increase our stamina, reduce inflammation as well as being full of prebiotics ( a type of fibre that feeds our micorbiome)

Ingredients

  • 100g of greek yogurt (10g of protein)

  • 1 cup of Kefir (approx 9 grams) tbsp of Kefir

  • 2 tbsp of organic oats or 1 tbsp of flaxseed, stir thru

  • Fruit season ….I’ve used figs here, but berries or grated apple

  • Small handful of almonds (about 23) chopped with skin  I love almonds in midlife - when compared with other tree nuts they are highest in protein, fibre, calcium and vitamin E.

  • 1 dessert spoon of sunflower seeds

Directions

  1. Place the yoghurt and kefir in a bowl

  2. Stir through oats or flaxseed if using (I’ll use oats if I’m working out after for the extra carbs) if not just the yoghurt

  3. Finally top with fruits, almonds and seeds
