Fig, Chocolate & Ginger Rolls

Ingredients ~ makes 20-24 mini fig rolls

Not only are these a delicious treat but they‘re also rich in calcium, fibre and magnesium, plus they have anti inflammatory properties due to the fresh ginger and lots of polyphenols great for your gut health and longevity

Tip ~ you can use any nuts that you have in, I always incl. almonds

Ingredients

  • 24 dried figs

  • 100g butter or coconut butter (softened)

  • 1 dessertspoon of desiccated coconut

  • 70g whole almonds with skin

  • 30g / 2 dessertspoons of sunflower seeds

  • 30g / 2 dessertspoons of hazelnuts

  • 2 tbsp of grated fresh ginger

  • 2 heaped tbsp of almond butter

  • 100g dark chocolate, chopped pistachios & rose petals

Directions

  1. Soak figs for 10 minutes and remove the little hard stalks

  2. Add figs to a food processor and add melted butter

  3. Whizz until combined

  4. Then place all other ingredients into the mix and just stir thru so the rolls have plenty of crunch

  5. Roll into little sausage shapes and place on a plate or tray lined with greaseproof paper

  6. Melt 100g dark chocolate

  7. Spoon or dip the rolls into the chocolate, covering half

  8. Sprinkle on chopped pistachios and rose petals if you want them to look pretty

  9. Refrigerate for 30 minutes before eating
