Amanda’s Kedgeree
This is a delicious salad I enjoy when peaches are in season. The fresh taste of the mozzarella pairs really well with the sweetness of the peaches and the saltiness of the prosciutto (you only need a little) and then mint, lemon and olive oil lift it to another level. One of my summer time favourites!
Ingredients
1 tbsp extra virgin olive oil
1 bunch of springs onions, chopped
1 tsp of turmeric
1 tsp of ground cumin
1/2 tsp of ground coriander
1/2 tsp of ground cinnamon
1 large cup of rice, cooked
Packet of smoked salmon (buy wild if you can!)
6 soft boiled eggs
Fresh dill or coriander / chives
Directions
Saute the spring onions for 5 minutes until softened
Add the spices and cook for further few minutes
Add cooked rice, and stir through
Add salmon torn or cut into small pieces
To soft boil eggs
Bring a pan of water to the boil
Once boiling place the eggs in carefully with a spoon
Boil gently for precisely 6 minutes
Then plunge eggs into iced water
Peel and place on top of the rice
Finally
Add fresh herbs
Dill/chives and coriander work well
