Peach and Prosciutto Salad

This is a delicious salad I enjoy when peaches are in season. The fresh taste of the mozzarella pairs really well with the sweetness of the peaches and the saltiness of the prosciutto (you only need a little) and then mint, lemon and olive oil lift it to another level.  One of my summer time favourites! 

Ingredients

  • 2 peaches

  • mozzarella (approx 125g)

  • handful of rocket 

  • 1 tbsp of fresh mint, lightly torn

  • few slices of prosciutto ham

  • olive oil and a squeeze of lemon to serve

Directions

  1.   Place quartered peaches without skins in bowl

  2.   Add leaves, mozzarella, mint  and prosciutto  

  3.   Squeeze over some lemon juice and live oil
