Peach and Prosciutto Salad
This is a delicious salad I enjoy when peaches are in season. The fresh taste of the mozzarella pairs really well with the sweetness of the peaches and the saltiness of the prosciutto (you only need a little) and then mint, lemon and olive oil lift it to another level. One of my summer time favourites!
Ingredients
2 peaches
mozzarella (approx 125g)
handful of rocket
1 tbsp of fresh mint, lightly torn
few slices of prosciutto ham
olive oil and a squeeze of lemon to serve
Directions
Place quartered peaches without skins in bowl
Add leaves, mozzarella, mint and prosciutto
Squeeze over some lemon juice and live oil
